RTK Granola Pound Cake

A Pound cake is a traditional, buttery cake that melts in your mouth. The dense, even texture and vanilla flavor make it appealing for breakfast as well as dessert.  

Why is it called Pound Cake? Originally created in Britain in the 1700's, pound cake got its name because the recipe called for one pound each of butter, sugar, eggs and flour.  Our recipe has been a favorite for decades. Rainbow Trout Kitchen's Classic Almond Granola adds a crunch to the top and texture and flavor to the cake. 

RTK Granola Pound Cake 

Recipe:
This recipe is for a standard 10-12 cup bundt pan. If you want to use a loaf pan, cut the recipe in half. The 6" heart pan in the photo came from Amazon. Metal is best for this recipe!
 
Ingredients:
3 Sticks of Butter (softened for a few hours or overnight)
3 c. Sugar
6 Eggs
2 tsp. Vanilla Extract (we like Madagascar)
1 tsp. Almond Extract
1 c. Sour Cream
3 c. Rainbow Trout Kitchen Classic Almond Granola crunched up
3 c. Cake Flour
1 tsp. Salt
1/2 tsp. Baking Powder
 
Directions:
Heat oven to 325. Generously butter pan with a some of the soft butter. Pour 1 cup of granola into the bottom of the pan. This will become the top when you flip your cake. 
 
Using a mixer, cream the butter and sugar until well combined (approx. 10 min). With the mixer running on low, add the eggs one at a time, then the vanilla, almond extract and sour cream.  Stop and scrape if needed. 
 
With a wisk, mix the salt and baking powder into the cake flour. Slowly fold the flour mixture into the wet mixture with a spatula. Add the RTK granola until just combined. Pour the batter into pans. 
 
Bake 1 hour and 15 minutes. Let the cake cool, then cover with a plate or platter and flip it over.  You may need to loosen the edges with a knife.
