Ingredients:
- 1 ¾ cups all-purpose flour
- 1 ¾ cups brown sugar (firmly packed)
- 1 tsp. salt
- 1 tsp. cinnamon
- ¼ tsp. baking soda
- 1 cup (2 sticks) softened butter
- 2 eggs
- 1 tsp. vanilla or almond extract
- 1 tbsp. nonfat yogurt (optional, for chewier cookies)
- 3 ½ cups Rainbow Trout Kitchen’s Granola
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large mixer bowl, combine the flour, brown sugar, salt, cinnamon, and baking soda.
- Add the butter, eggs, and vanilla or almond extract. If you want extra chewy cookies, mix in 1 tablespoon of nonfat yogurt.
- Hand-stir the 3 ½ cups of Rainbow Trout Kitchen’s Granola into the dough.
- Drop the dough by rounded teaspoonfuls, placing them 2 inches apart on a parchment-lined or lightly greased baking sheet.
- Bake for 10-12 minutes, or until the cookies are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
