Kay's Chewy Granola Cookies

These chewy granola cookies are perfect for any occasion. Packed with the delicious crunch of Rainbow Trout Kitchen’s Granola, they are sure to be a hit! This recipe makes about 5 dozen cookies, so you’ll have plenty to share.

Ingredients:

  • 1 ¾ cups all-purpose flour
  • 1 ¾ cups brown sugar (firmly packed)
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • ¼ tsp. baking soda
  • 1 cup (2 sticks) softened butter
  • 2 eggs
  • 1 tsp. vanilla or almond extract
  • 1 tbsp. nonfat yogurt (optional, for chewier cookies)
  • 3 ½ cups Rainbow Trout Kitchen’s Granola

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixer bowl, combine the flour, brown sugar, salt, cinnamon, and baking soda.
  3. Add the butter, eggs, and vanilla or almond extract. If you want extra chewy cookies, mix in 1 tablespoon of nonfat yogurt.
  4. Hand-stir the 3 ½ cups of Rainbow Trout Kitchen’s Granola into the dough.
  5. Drop the dough by rounded teaspoonfuls, placing them 2 inches apart on a parchment-lined or lightly greased baking sheet.
  6. Bake for 10-12 minutes, or until the cookies are golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
