Posted by Jakie Bowles on

Buckle up your taste buds! This cold dessert packs protein and berries into a sweet red, white, and blue treat. Rainbow Trout Kitchen granola adds a nice crunch. A flexible recipe - you can change any of the ingredients to suit your taste. Get the napkins ready and dig in!

Ingredients:

  • 32 oz container whole milk, plain Greek yogurt (or any yogurt you prefer)
  • 2 Tbsp honey (omit if your yogurt is already sweet)
  • 1.5 tsp vanilla extract (we always use Madagascar)
  • 1.5 tsp cinnamon
  • 1 cup blueberries
  • 1 cup strawberries, chopped
  • 1/2 cup Rainbow Trout Kitchen Classic Granola!

Preparation:

  1. Line a large rimmed baking sheet with parchment paper (or use 2 smaller baking sheets if they fit better in your freezer) and plan to divide the yogurt.
  2. In a bowl, combine the yogurt, honey, vanilla, and cinnamon.
  3. Spread the mixture onto the parchment, about 1/4 inch thick.
  4. Top with blueberries, strawberries, and granola.
  5. Place into the freezer until frozen (2-3 hours).
  6. Break the bark into pieces with a pizza cutter or knife.
  7. Enjoy!

Storage:

Store leftover bark in a container in the freezer.
