Easy, dreamy granola tarts - a perfect pickup treat!

These beautiful granola and berry tarts – made with Rainbow Trout Kitchen’s classic granola – are a party showstopper. Easy to create, transport and serve, you'll make these tarts again and again. Who wants to deal with plates, forks or slicing a dessert? Pickup sweets are always a festive hit!

Rainbow Trout Kitchen Granola Berry Tarts

Makes 40 mini muffin cups
Total time ~20 minutes

Ingredients:

  • 16 oz Rainbow Trout Kitchen Classic granola
  • 1 stick salted butter, melted
  • 1/8 cup honey
  • Yogurt or lemon curd (your choice – we like Bonne Maman lemon curd)
  • Fresh berries & mint to garnish

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Crush granola into small pieces.
  3. Add melted butter and honey; mix thoroughly.
  4. Grease a mini muffin pan.
  5. Spoon granola mixture into greased cups.
  6. Use your finger or the back of a tablespoon to make an indentation in each cup.
  7. Bake for 8 minutes at 350°F.
  8. Let cool completely before removing from the pan.
  9. Store in an airtight container unless using immediately.

Just Before Serving:
Fill granola cups with yogurt or lemon curd. Top with berries and mint.
